Carlsberg and Brooklyn Brewery create lager made with drought-resistant grain

Carlsberg has launched a new 100% Fonio Lager, developed in collaboration with Brooklyn Brewery.

 

This beer replaces traditional barley with fonio, a drought-resistant grain native to West Africa, to improve sustainable brewing practices.

 

The limited-edition lager, brewed at Carlsberg’s Research Laboratory, uses a unique fermentation process that incorporates Carlsberg yeast and fonio, forgoing the use of bittering hops entirely.

 

This approach not only showcases the versatility of fonio in brewing but also highlights the potential for alternative grains to be used in the face of climate change, which poses a growing threat to traditional barley supplies.

 

Zoran Gojkovic, director of brewing science and technology at Carlsberg, said: “Our work with fonio is a testament to the curiosity that drives progress in brewing. This partnership not only explores a new ingredient but also sets a precedent for the industry to consider alternative crops.”

 

The unique packaging of Fonio Lager reflects a commitment to artistry and cultural heritage, featuring designs by Cameroonian artist Kevin Bongang. Each bottle showcases a distinct segment of a mural that incorporates the Carlsberg hop leaf.
